2. Lattice cupcakes (see photo, page 137, bottom tier): Spoon some white frosting into pastry bag fitted with basket-weave tip. Pipe lines about 3⁄4 in. apart on top of 8 cupcakes. Cut tip off end of bag and pipe a small dot of frosting in center of each flower (save bag for top cupcake).

3. Big-flower cupcakes (on plate and middle tier): Spoon white frosting into a pastry bag fitted with small star tip. Pipe petals around edge of 9 cupcakes (set bag aside for small-flower cupcakes and top cupcake). Fill center with yellow nonpareils; gently press to adhere. Spoon green frosting into a pastry bag fitted with a small leaf tip. Pipe several leaves around edge of each cupcake (set bag aside for top cupcake).

4. Small-flower cupcakes (top tier): Place about 8 small yellow candies evenly spaced on top of each of 6 cupcakes. Using bag with small star tip, pipe white petals around each candy.

5. Top cupcake: Roll edge of cupcake in yellow sugar. Pipe ring of green leaves near center of cupcake. Pipe white petals over green leaves. Pipe yellow dots in center of flower.

Ingredients

• 18 ¼-oz. box yellow cake mix (check package directions for additional needed ingredients) or your favorite yellow cake recipe

• 2 cans (16 oz. each) white frosting

• food coloring, assorted colors

Directions

1. Preheat oven to 350ºF. Line 24 muffin cups with paper liners. Prepare cake batter; spoon it evenly among muffin cups and bake according to package directions. Transfer to a wire rack and cool 5 minutes. Remove from pans and cool completely.

2. Spoon 1½ cups of the frosting into a zip-top plastic bag and seal. Divide the remaining frosting into four separate small bowls. Tint each bowl of frosting to desired pastel colors with food coloring (make one yellow). Spoon ½ cup yellow frosting into a zip-top plastic bag and seal.

3. Cover each cupcake with one shade of tinted frosting.

4. Using scissors, snip a ¼-inch corner from the bag holding the white frosting and a 1/8-inch corner from the bag holding the yellow frosting.

5. Pipe a 1-inch circle of yellow frosting onto the center of each cupcake. Pipe petals with the white frosting, starting at the yellow circle and pulling outward. Continue around yellow center to create flower petals. Repeat with the remaining cupcakes.
